In the technological process of sugar production, already prepared syrup enters the crystallization department, where in vacuum devices, by evaporating water under vacuum, massecuite is obtained - a mass that consists of crystalline sugar and a sugar solution. The massecuite is centrifuged to obtain crystalline sugar and a solution. The solution is subjected to additional crystallization in 2–4 stages to maximize the extraction of sugar from it, since the solution removed from the plant after the last crystallization—molasses—is a by-product (waste) of sugar production. Therefore, the less sugar it contains, the greater the yield of finished products will be.

The main equipment of the crystallization department is vacuum crystallizers.

Description of the device

The saturated massecuite to be cooled is continuously fed using a pump to the lower part of the crystallizer, where it is mixed with the cooled and circulating mixture, heating it. The vacuum pump creates a vacuum (vacuum) throughout the entire installation. Due to the fact that the required vacuum value is created in the crystallizers on the surface of the working medium in the crystallizer bodies, the solution begins to boil at certain temperatures. In each subsequent crystallizer, the vacuum increases, and the boiling point of the solution decreases.

To ensure saturation of the massecuite, using an axial mixing device, the solution is moved and mixed from bottom to top through a circulation pipe. Axial mixing device - consists of a shaft, agitator blades, mounting flange, gearbox, motor and steel frame. The working body is a propeller, which is installed at the bottom of the central pipe and is driven by a shaft connected to the engine. The engine itself is located outside the crystallizer. The axial mixing device is connected to the crystallizer using a mounting flange.

During boiling, the resulting steam-air mixture (vapors), due to the operation of a vacuum pump, is removed through a pipe from the crystallizer body. Due to this, the liquid phase of the solution is removed from the crystallizer in the form of steam and the solution is cooled. Due to the fact that part of the water from the solution has evaporated, the solution becomes supersaturated, sugar begins to crystallize in the form of crystal aggregates. The resulting sugar is extracted from the lower part of the crystallizer by a pump and is subsequently sent for drying, and the solution extracted from the upper part of the crystallizer is further crystallized in 2–4 stages in order to maximize extraction.

When an individual crystallizer is stopped, it can be excluded from the general circuit using a bypass pipeline connected to all stages. This scheme makes it possible to clean the crystallizer without stopping the operation of the installation. If necessary, you can turn off several crystallizers located in series at once by providing a bypass pipeline.
